Since Clovis was baptized there in the late 5th century by Saint Remi, many Kings of France (with a few exceptions) were crowned there. Meet Dom Pérignon, the "spiritual father" of Champagne in Hautvillers
Perched on the heights of the Montagne de Reims is the village of Hautvillers. Offering sumptuous panoramic views over the Champagne hillsides, this charming village is a place of pilgrimage for all champagne lovers. It was here, in fact, that Dom Pérignon, the Benedictine monk in charge of the vineyards at Hautvillers Abbey in the mid-seventeenth century, set about creating the best wine in the world.
Legend has it that he invented champagne. Until recently, encyclopaedias claimed that Dom Pérignon had found a new method of pressing wine, known as the méthode champenoise. He was also credited with discovering the blending of grape varieties and the cork stopper. A remarkable manager, Dom Pérignon was nonetheless the creator of champagne. All his life, he strove to control the natural effervescence of his wine. This effervescence was largely due to the region's harsh climate.
